Dairy Free Ice Cream- A Guilt Free Treat

Who doesn't LOVE ice cream? I'm obsessed with ice cream, it is one of my favorite desserts, especially when I get to add all the chunky and gooey delicious toppings (TCBY is my favorite, my bowl always weighs more than Kenny's, haha). When Kenny wants to take me out on a date, he always asks if I want to go out for ice cream afterwards. He knows that the date is not complete without it! Being the ice cream lover that I am, I could eat it every day. I don't because, unfortunately, it's not the healthiest habit to get attached to. I don't love that I can't eat ice cream every day and call it a health food, but I do love coming up with healthier ways to eat things that I love so that I can enjoy them more often without the stomach ache, inflammation and sugar rush afterwards. If you're an ice cream fan like me, give this recipe a try. Hopefully it doesn't disappoint!
Step 1: Freeze 3 ripe banana's overnight (peeled and sliced before putting in freezer). Step 2: Combine the following ingredients in a food possessor until you get a smooth and creamy consistency. - 3 frozen banana's - 1/3 unsweetened non-dairy milk (I used coconut milk, but any unsweetened non dairy milk will do!) - 2 Tablespoons Hershey's Cocoa Powder, 100% Cocoa Special Dark - 1/2 tsp. vanilla extract Step 3: Serve 1 scoop in bowl as is or with your favorite topping. I topped mine with almonds, but the options are endless. Pecans, cashews, peanuts etc. would all be yummy! Other Flavors: Strawberry ice cream- replace the cocoa powder with a 1/2 cup of frozen strawberries. Chocolate and Peanut Butter ice cream - Add 2 Tablespoons of all natural peanut butter and omit 1 Tablespoon of cocoa powder ENJOY!
