Banana Pancakes!

I’m the type of person who loves breakfast for dinner! And when it’s just me cooking for myself, it’s sometimes what I do! 🙂
I also love preparing a yummy breakfast on the weekends and sitting at the table enjoying it with my Husband and a hot cup of coffee while we solve all the world problems. It’s a moment when it feels like life finally slows down and you just get to sit, relax and eat with your loved one!
Most of the time I like to make pancakes. I try all variations and experiment with different fruits, nuts etc. This past weekend I made some yummy banana pancakes that are totally worth sharing because you don’t need a whole lot of ingredients, can whip them up quickly and they taste delicious!
Banana Pancakes:
Note: Makes about 5 pancakes. Each pancake is about 105 calories!

Ingredients:
1/4 Whole Wheat Flour (I used Bob’s Red Mill Whole Wheat Flour, or your choice of flour)
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
4 eggs, beaten
1/2 mashed banana
1 tsp. vanilla
Instructions:
In a medium bowl mix together the dry ingredients.
Place the wet ingredients into a blender with the banana and blend. You could also mix these separately with a mixer but may have chunks of banana oppose to a smooth mixture.
Blend together the wet and dry ingredients.
Preheat a greased skillet (I use coconut oil or extra virgin olive oil) on medium heat.
Measure out about 1/4 of pancake batter into preheated pan. Cook for about 2 minutes each side.
Serve with peanut butter, a sliced banana and warm maple syrup! Goes great with turkey breakfast sausage and a cup of warm coffee!
