There is nothing better than waking up on a Saturday morning, with no alarm clock, no real agenda and to a beautiful blanket of snow. Being stuck in the warmth of my home, with my sweet little family gave me no better reason than to binge watch my favorite cooking shows and to get creative in the kitchen. I was craving something sweet, chocolatey and delicious (image that), but yet I didn't want to kill all of my hard work that I've been putting into my health habits lately. I also had no motivation to drive to the grocery store, so I decided to get creative with things that I already had in my pantry. The outcome were these sweet, fudgey chocolate bombs. There is no added sugar, and they hit the spot! Even Kenny was raving over them. Even better, all you need is just 4 simple ingredients, and a blender. As a bonus, these Chocolate Bombs have health BENEFITS! And when I'm eating something, that is always the goal. I ask myself, what will I benefit from this?! Check out all of the benefits of these little morsels: Chocolate Cocoa Powder: Cocoa is rich in polyphenols--- which reduces inflammation and improves cholesterol levels. Extra Virgin Coconut Oil: - It helps burn fat, especially in the abdominal region, and reduces appetite. - It contains lauric acid, which helps balance hormones naturally and increases estrogen levels, especially during menopause. - Helps control blood sugar levels as it enhances the secretion of insulin in the body and doesn’t cause an insulin spike. ---CHOCOLATE BOMBS--- Ingredients: - 6-8 medjool dates, rinsed, pitted, and sliced in half - 2 Tablespoons chocolate cocoa powder - 2 Tablespoons extra virgin coconut oil, melted - Sprinkle of sea salt Directions: 1. Rinse the dates in cold water. If they have a pit in them, remove them and slice the dates in half. Let the dates soak in warm water for about 5minutes to soften them. 2. While the dates are soaking melt the coconut oil. Once the dates are done soaking place all of the ingredients into a blender or food processor, including a small sprinkle of sea salt. 3. Blend the ingredients together until everything is mixed together well and has a smooth texture. You might have to stop the blender and scrap the sides down and blend again until everything is nice and smooth. 4. Next you will roll the dough into 1 inch (or smaller) balls. You should be able to make about 8-10 balls. To top them off sprinkle with a little bit more sea salt. 5. Eat them while they are still soft a gooey, or place them in the fridge to let them Harden up a bit! Either way THEY ARE DELICIOUS!!! ENJOY! Be Unstoppable,
