Crockpot Vegan Chili

Since I've started working 50 hours a week I have really picked up my meal planning game. If my menu isn't ready to go for the week, that's just asking for a disaster to happen. Having my meals planned out on paper and having the groceries stocked up on Sunday's keeps me well fueled throughout the week. I'm positive if I didn't have my meals thought out ahead of time then I'd be flying by the seat of my pants and munching on whatever I find available... which sounds disasterous for my health. I write out all of my dinners for the week and keep them as simple as possible. I do a lot of 1 bowl meals and try not to plan anything that takes over an hour to make (unless it's a crockpot meal)! I make dinners that will serve 4-6 people knowing that Kenny and I will be eating it the next day or two for lunch. This delicious, crockpot vegan chili has been one that I keep coming back to because it's super satisfying and keeps me full for a good four hours! Hope you love it as much as we do! INGREDIENTS 2 1/4 cups water OR organic low sodium vegetable broth
1 cup uncooked quinoa
15 ounces can organic black beans
14.5 ounces can organic diced tomatoes
1 chopped red bell pepper
1 chopped yellow bell pepper
1 jar mild pepper rings (from Aldi, drained and rinsed)
1/2 medium onion, chopped
2 cloves garlic, diced
1 tablespoon chili powder
1/2 teaspoon crushed red pepper flakes
1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon oregano
1 cup shredded vegan cheese Optional: Spinach and avocado INSTRUCTIONS Add all of the ingredients except for the cheese into a slow cooker. Stir all of the ingredients together until everything is nicely combined. Set the slow cook on high for 2.5 to 3 hours. All of the ingredients should bake together until it becomes a thick consistency. Once it's finished add the shredded vegan cheese and mix it in until the cheese has melted into the chili. Serve hot, mix in some spinach (for some extra veggies) and top it off with sliced avocado! ENJOY! Be Unstoppable,
