Buffalo Chicken Chili: Gluten Free, Dairy Free, No Added Sugar

BUFFALO CHICKEN CHILI

If you’re tired of boring chili it’s time to give this a go! It's so warm and comforting. A perfect dish to keep holding you over through this cold winter! Ingredients: 2 Tablespoons olive oil 1pound ground organic chicken 15oz. canned organic white navy beans (drained and rinsed) 14.5 oz canned organic fire roasted tomatoes

1 red pepper

1 green pepper

2 cups organic chicken broth

¼ cup – ½ cup buffalo wing sauce (I like Frank’s) ½ teaspoon celery salt ½ teaspoon dried cilantro ¼ teaspoon sea salt 2 handfuls of organic baby spinach homemade coconut sour cream (*see recipe) homemade ranch seasoning (*see recipe) Blue cheese crumbles if desired (Ommit if you try to avoid dairy like myself, or are dairy free) Coconut Sour Cream: 1 can full-fat unsweetened coconut milk (leave in fridge overnight) 1-2 tablespoons apple cider vinegar 1/8 tsp. sea salt Directions: 1. Place the can of coconut milk in the refrigerator for at least 6 hours (or overnight). This will cause the cream to separate from the milk. 2. Open the can of coconut milk and scrape out the cream into a medium sized bowl. I open the can from the bottom and pour the milk out into a separate container before scraping out the cream. 3. Whisk the sea salt and vinegar into the cream until well combined. Taste and add vinegar or salt if needed. Note: you could also use lemon juice. Homemade Ranch Mix: 2 tsp salt

4 tbsp dried parsley

3 tsp dill weed

2 tsp dried chives

4 tsp garlic powder

4 tsp onion powder

4 tsp dried onion flakes

2 tsp black pepper Mix everything together in a small bowl. Then add to chili pot as directed.

Buffalo Chicken Chili Instructions:

  1. Place 2 tablespoons of olive oil in bottom of a large pot. Heat on medium heat. Once heated, add the ground chicken and cook until fully cooked.

  2. Add remaining ingredients except for the coconut sour cream and spinach.

  3. Let simmer for 30 minutes.

  4. Stir to incorporate coconut sour cream, spinach leaves and add additional wing sauce as desired.

  5. Serve in a bowl with whatever toppings you wish!

  6. Add blue cheese crumbles if that floats your boat!
