No-Bake Blueberry Dessert Bars

Also known as the best blueberry dessert bars I’ve ever made! The perfect sweetness and texture, but yet a delicious unique flavor with a hint of gingerbread flavor. You would never think that the two go together, but trust me, they DO! It’s SO easy to make and no one will ever suspect that this dessert is vegan and healthier than a blueberry muffin from Starbucks! I always keep frozen blueberries on had, and now I have another use for them! If I don't use them for this dessert then I'll throw them into smoothies, oatmeal or just snack on them for a quick sweet tooth fix.







Blueberry Bars: Bottom Crust Layer 1 1/2 cup oat flour 4 Tbsp water 2 Tbsp oil (I use melted coconut oil) 2 Tbsp maple syrup 2 Tbsp molasses Top Blueberry Layer 2 cup blueberries (fresh or frozen. If frozen let them thaw a little first) 3 cup oat flour 1/2 cup maple syrup 2 T oil (I use melted coconut oil) Optional: ¼-1/2 Cup Chocolate Chips (I prefer unsweetened non allergy PSACHA organic cocoa chips, or Enjoy Life semi-sweet chips. The sweetened chip isn't necessary as there is enough sweetness from the dessert that it'll give the chips a sweet flavor. But if you feel the need for a sweet chip and aren’t a dark chocolate lover, I understand. Add your favorite chocolate chips, after all it is dessert, indulge a little!) Instructions Bottom Crust Layer: First melt the coconut oil in the microwave so it can easily be mixed in with everything else. Then, with a large mixing spoon mix together all of the ingredients for the bottom layer in a medium sized mixing bowl. Mix well, it will get thick and form into a big ball. Press the mixture into a thin layer in a 9x9 pan or something close to it. Place pan in refrigerator for about 10 minutes to firm up. Top Blueberry Layer: 1. Puree blueberries in a food processor. 2. Melt coconut oil and combine all remaining ingredients (except for the chocolate chips) in the food processor. 3. Mix in chocolate chips with a large spoon or spatula. 4. Spread mixture evenly on top of bottom layer. Garnish with extra chocolate chips if desired. Slice into about 8-10 bars and serve using a flat spatula, scraping up from bottom of the pan to scoop up all the goodness! ENJOY! Be Unstoppable,
