Sweet and Tangy Cabbage, Apple, Avocado Salad (ANTI-INFLAMMATORY, WHOLE30, LOW CARB)

This super easy, fresh salad will become a new favorite side dish! It's prepared with a mixture of veggies, fruit and healthy fats which makes it satisfying and filling when paired with your favorite protein. It's also anti-inflammatory, Whole30 compliant, low carb, and delicious in a lettuce wrap or by itself! Make a couple of batches ahead of time to enjoy for an entire week ahead!

Kenny made this for the first time this weekend when surprising me with a Chilean Sea Bass Dinner (one of my favorite fish meals!) It's an extremely tender and buttery fish that just melts in your mouth. Our favorite way to eat it, is grilled, just lightly seasoned with sea salt and pepper. It paired nicely with this fresh salad, which made the dish extremely flavorful. As a bonus, this particular salad happens to be an anti-inflammatory salad, win! Anything that aids in keeping inflammation down, I'm all about. I personally get easily inflamed when I eat the wrong foods such as sugar, dairy, soy, gluten and alcohol. The best thing that I did for myself, was to figure this out by experimenting with different foods. Now, I eat to feel good and rarely experience bloat and inflammation after meals. Actually, too many of us accept inflammation and bloat as 'normal'. How often do you hear someone say that they're dealing with headaches, exhaustion or weight gain? I personally hear it more than once on a daily basis. What most people do not realize is that these symptoms aren't normal. Our bodies were built to feel amazing but the majority of us accept feeling tired, bloated and foggy brained. Now let's get going on making this sweet and tangy salad! It would be great to pair with a variety of meals even if you're not following a Whole30 diet plan! It’s easy to make in bulk to pack in lunches, even makes for a great salsa to pair with chips. Just set aside some time to chop everything up, mix it all together and you have yourself a salad. Store in the refridgerateor to keep it fresh!

Sweet and Tangy Cabbage, Apple, Avocado Salad (ANTI-INFLAMMATORY, WHOLE30, LOW CARB)

Ingredients:

  • 1 large avocado (peeled, pitted and diced into bite size pieces)

  • 1 cup purple cabbage (finely chopped)

  • 1 large apple (I prefer a red crispy apple for this particular dish)

  • 2 Tbsp. red onion (finely chopped)

  • 1 Tbsp. parsley (finely chopped)

  • Juice from 1 lemon

  • 2 tsp. fresh lemon zest

  • sea salt and black pepper for seasoning

  • 1 tsp. coconut chips

  • 1 Tbsp. unsalted, raw sunflower seeds

  • 1 head butter lettuce

Instructions: In a large bowl, combine the avocado, apple, cabbage, red onion, parsley, lemon juice, lemon zest, sea salt and pepper. Toss to combine all the ingredients. Place a couple of big spoonfuls of the salad in a washed lettuce leaf, or without it. Garnish with sunflower seeds and coconut chips. Serve and enjoy!
