WHOLE30: Salmon and Guacamole

Prep Time: 15 minutes Cook Time: 20 minutes Total Time: 35 minutes

Serves: 2-4

Ingredients:

For the Salmon: 1 lbs salmon 1 T. olive oil (I use extra virgin olive oil) 1 tsp sea salt 1 tsp black pepper

For the Guacamole: 2 avocado, peeled and sliced 1/4 small red onion, finely chopped Juice from 1 lime 1-2 T. finely chopped cilantro Sea salt to taste

Directions:

Pre heat oven to 400F.

  1. Prepare salmon by rubbing it down with the olive oil. Lightly season with sea salt and black pepper. Place in 9×12 glass baking dish or cookie sheet prepared with aluminum foil. Once oven is heated bake salmon for 15-20 minutes or until it is soft and flakes apart with a fork.

  2. While the salmon is baking prepare the guacamole. Combine the sliced avocados, onion, cilantro, lime juice, and salt in a bowl with a fork.

  3. Once salmon is done serve salmon topped with a couple spoon fulls of the avocado mixture and pair it with your favorite veggie for a satisfying and filling dinner.
